A Campfire Favorite, Made at Home

Some recipes stay with you long after the meal is over. This one started at a campsite.

During one of our camping trips, our guest made this incredible little brie situation in a pan melty cheese, sweet fruit, toasted bread, and all the things that somehow taste even better when you’re sitting outside, surrounded by trees and a little bit of smoke from the fire! I remember really enjoying it so much so that long after the camping trip was over, I found myself thinking about it again.

I didn’t know exactly what it was called. I just knew I wanted to eat it again. So, naturally, I went down an Instagram rabbit hole. 😆

After a little searching and a few different versions, I decided to recreate my own take at home: brie, fresh nectarine, honey, toasted sourdough, and prosciutto. And honestly? It was just as good as I remembered!

The Brie

I started with a small wheel of brie and sliced it diagonally into pieces, not too thin, just enough so that it would soften and melt beautifully once it hit the pan. I placed the brie right in the middle of my pan, then sliced a ripe nectarine and arranged the pieces all around it.

A little honey goes over everything, and then comes the fun part: letting the heat do its thing. As the brie warms up, it becomes soft and gloriously melty, while the nectarines start to caramelize around the edges. The sweet fruit, creamy cheese, and honey all come together in the pan.

It smells ridiculously good.

Toasted Sourdough + Prosciutto

While the brie was doing its thing, I toasted slices of sourdough until they were crisp around the edges but still had a little chew in the middle. Then came the prosciutto. There’s something about salty, delicate prosciutto with warm, creamy brie and sweet nectarines that just works. Every bite has a little bit of everything! Crunchy bread, salty meat, creamy cheese, sweet fruit, and honey. And that’s really the beauty of this recipe. It doesn’t need much.

The Best Part

Once the brie was completely melted, I grabbed a piece of toasted sourdough and layered it with prosciutto.

Then I scooped up some of that warm, gooey brie and a piece of honey-kissed nectarine. That first bite took me straight back to the campsite.

Maybe that’s why I love recipes like this. They’re not always about discovering something completely new. Sometimes, they’re about remembering something you enjoyed and finding a way to bring it home with you.

This one started around a campsite, but I have a feeling we’ll be making it again, camping or not. Especially when there’s good sourdough, a ripe nectarine, and a wheel of brie waiting in the fridge.

Nectarine Brie with Sourdough & Prosciutto

You’ll need:

● Brie cheese

● Ripe nectarine

● Honey

● Sourdough bread

● Prosciutto

● A little oil or butter, if needed

How I made it:

1. Slice the brie into diagonal pieces, keeping them thick enough to hold together while they melt.

2. Place the brie in the center of a cast iron pan (or any pan will do!)

3. Slice the nectarine and arrange the pieces around the brie.

4. Drizzle everything with honey.

5. Cook over the grill or heat until the brie is soft and melted and the nectarines are warmed and slightly caramelized.

6. Meanwhile, toast slices of sourdough until golden and crisp.

7. Top the sourdough with prosciutto.

8. Scoop the melted brie and warm nectarine onto the toast.

9. Eat immediately! Preferrably while everything is still warm and gloriously messy.

Perfect for camping, slow weekends, or those little meals that feel much fancier than the effort they actually took. ❤️
