Lemon Blueberry Pound Cupcakes

As a parting gift for my workplace, I baked these Lemon Blueberry Pound Cupkakes. I followed the recipe given to me by my colleague. It’s moist and smooth on the inside with a crispy crust on the outside. We’ve been trying ketogenic diet so most of the ingredients are kinda healthy 😁 It’s perfect for those who are craving for something sweet but on some food restrictions plus it’s quick and easy to make!


1/2 cup of coconut flour

1 tsp of salt

1/4 cup of baking soda

2 large lemons squeezed

1/2 cup of stevia (for baking)

8 medium eggs

2 tbsp of vanilla

1 cup of blueberry


1. Preheat oven by 350 F.

2. Mix dry and wet ingredients well.

3. Place cupcake holders on a pan.

4. Bake for 40 mins.

5. Serve and enjoy!

6. *optional: you can top it off with stevia sweetener for garnish and a hint of sweetness!
